Since January 2006 with the introduction of new European Directives it is now a legal requirement for food business operators to have a document food safety management system. The system is to be based on the principles of ‘Hazard Analysis Critical Control Point’ (HACCP).
Many small to medium size food businesses are not sure on how to undertake a HACCP study as they do not have the training or time required to implement an adequate system. Therefore to help food business operators to fulfil their legal obligation the ‘Food Standard Agency’ produced SFBB.

The SFBB pack will play an important role in determining what score rating a food business receives when an environmental health officer calls to assess your premises.
The general public will vote with their feet!! Don’t lose out financially because of lost custom. Take your competitors custom and gain financially with five stars.
This is a nationwide scheme adopted by all local authorities. The system is generally based on a star rating system (generally a 5 star rating system). The number of stars you obtain (5 stars being the best standard) is based the following factors:
Documented food safety management system – do you have one? And is it being followed?
Structure of your premises – are your premises in a good state of repair?
Food safety/hygiene – are there poor practices/procedures, or other situations found at the time of inspection that could cause food to become unsafe or contaminated in any way?
Confidence in management – do you have a good compliance record? Are you likely to comply with legal standards?
